Behind The Drinks
Gold rush cocktail
There is a kind of big pendulum swinging back and forth, at first everything is simple.
In making drinks we creative bartenders use what we can find, and add new ingredients or processes as they are available to the old and familiar.
More and more people start working with those discovered stories and found recipes and everyone adds their own twist or adaptation according to country, season, availability and personal taste. Some catch, some are thrown. The original product becomes more and more complex and as professionals try to outdo each other with the most extreme versions they can find, the product becomes so complex that people wish for something simpler but perfect, this is the story of Gold Rush.
If we tell the truth it is a whiskey sour with honey.
The variation of the classic whiskey sour mixed with honey instead of simple sugar syrup, the drink appears in Robert Simonson's book Three ingredients cocktails, where he explains how it was a mainstay in the early years of milk and honey nyc, one of the cocktail bars that started it all.
It really doesn't get much more beautiful and simple than this cocktail... Simonson uses a bourbon that is not available in Israel. Personally, I usually use Woodford Reserve or Buffalo Trace, but don't hesitate to use your favorite American whiskey.
recipe:
60 ml of bourbon
22.5 ml fresh lemon juice
22.5 ml rich honey syrup
Tools: shaker, strainer
A low glass filled with ice
Combine all ingredients in a shaker filled with ice and shake until chilled, about 15 seconds. Strain into a low glass with one large ice cube or full of small ones
Rich honey syrup: heat a cup of honey and a cup of water in a pot over medium heat, stirring occasionally, until the ingredients are combined. Remove from heat, let cool, then refrigerate. The syrup is stored in a well-sealed container and is kept for at least two weeks.
In our holiday edition you can find a special version that I made based on the cocktail in a combination of quality bourbon, Uzbek apricot, Benedictine and lemon.
